The Evolving Culinary Identity of Santa Teresa, Costa Rica

By Chef Eitan

When I first arrived in Santa Teresa, Costa Rica, nearly a decade ago, food was not the reason people came.

It existed quietly in the background — simple casados, basic tacos, a handful of mid-level restaurants, and perhaps one or two places that stood slightly above the rest. No one spoke about Santa Teresa as a culinary destination. People came for the ocean, the pace, the space. Food was functional, not aspirational.

Over the years, that has changed. Not abruptly, and not by strategy.

Santa Teresa’s culinary scene did not emerge from a deeply rooted gastronomic tradition, nor from a single cultural identity. It grew from something less defined — and perhaps more powerful, people.

Travelers who stayed.

Chefs searching for freedom.

Bakers, baristas, small entrepreneurs who arrived for a season and ended up building a life.

Each brought with them flavors, techniques, instincts, and memories from elsewhere — and gradually, almost unintentionally, those influences began to shape the town’s table.

Culinary growth is built through teamwork and intention.

Today, you can find genuinely good coffee here.

Bread programs with structure and intention.

Pastries built on fermentation and care.

Restaurants cooking at a level that simply did not exist ten years ago — grounded in local ingredients, yet informed by global technique and perspective.

Global technique meets local rhythm in Santa Teresa kitchens.

From a chef’s point of view, the evolution is most tangible in availability.

A decade ago, sourcing certain ingredients required improvisation, persistence, and frequent drives to San José. What felt unreachable then is often accessible now — sometimes even in neighborhood markets.

This shift has not erased simplicity. It has made simplicity a choice.

Chef Eitan, reflecting on the culinary evolution of Santa Teresa.

Santa Teresa’s food is not about imitation.

It is about working with what exists here, armed with a broader set of tools.

And the most interesting part?

Santa Teresa is still not finished.

Its culinary identity is still forming, shaped by movement rather than heritage. There is no single definition, no fixed tradition. What exists instead is momentum.

The heat, the fire, the movement — the craft behind the plate.

The future here will not be defined by rankings or stars. It will be defined by depth — by a community that understands food as something that grows at the rhythm of its environment.

For those interested in watching flavor take shape slowly, honestly, through lived experience, Santa Teresa offers something rare:

A taste still being written.
